Oysters 101
There are over 100 species of true oysters and traditionally they are named after the body of water or bay in which they are grown and are known by a myriad of names such as Wellfleets, Kumamoto and La Saint Simon.

The molluscs take on the characteristics of the water in which they live. This impacts their flavour and texture so that tastes can range from sweet to salty to buttery and metallic, with texture running firm to soft and gooey to chewy. Some oysters have hints of seaweed, mineral flavour and hints of melon and mushrooms.

The main difference between East Coat and West Coast oysters is East Coast ones are smaller, milder in flavour and saltier, while West Coast varieties are creamy and sweet.

The largest oyster-producing body of water is located in Chesapeake Bay on the east coast of the U.S. Large beds of edible oysters are also found in Japan and Australia.

Penn State to Start Playing Some Games in Tiny Rec Hall (centredaily.com; Staff)

Penn State men’s basketball will renew the Rec Hall series, this time for two games in the 2015-16 season, the athletic department announced on Tuesday.

The Nittany Lions will host Canisius on Dec. 10 and Louisiana-Monroe on Dec. 12 for the second annual “Return to Rec” event.

“We are grateful for the opportunity to take our program and fans back to Rec Hall for two games this season,” said head coach Pat Chambers. “It is such a storied venue and holds the opportunity to create an incredible atmosphere. I need to thank the administration and my fellow coaches who call Rec Hall home for making this second Return to Rec possible."

In last season’s first “Return to Rec” game, Penn State lost to Princeton 81-79 after giving up a 20-point lead, in front of a crowd of 6,188. It was the first men’s basketball game played there since the Nittany Lions defeated Wisconsin, 79-50, in the building on Jan. 7, 1996. From 1926-96, the Lions compiled a 514-183 (73.7%) record in Rec Hall, including a 45-game win streak from 1951-55.

Penn State is on a 10-game winning streak when playing non-conference opponents. This season’s schedule includes five road trips — four away sites and one neutral site — to Pittsburgh, Philadelphia, Boston, Washington and Las Vegas as well as a Big Ten matchup against Michigan in New York’s Madison Square Garden.

With Taxpayer Help, SU Builds $4 Million Parking Lot (PS; Knauss)

What do you call a parking lot that has 99 parking spaces, 12 bike racks and a bus shelter?

You'd call it an "intermodal transportation center,'' if the federal government was giving you nearly $4 million to build it.

Syracuse University has begun construction on a $4.4 million project at the Syracuse Center of Excellence that will include a privately owned surface parking lot for 99 vehicles. Federal highway funds will pay 80 percent of the cost -- at least $3.5 million.

Next to the parking lot, SU will build a small, open-air pavilion with vending machines that will provide shelter to people waiting for the Centro bus on East Washington Street. Attached to the wall of the shelter will be 12 bike racks. Dozens of solar panels will line the parking lot.

Despite the pavilion (estimated to cost $772,000) and the solar panels ($225,000), the most obvious role of the new facility will be to provide on-site parking for cars at the Center of Excellence, a research center. Employees and visitors have been parking in leased off-site lots since center opened five years ago.

Some of the parking spaces will be left open for public use. SU will charge at least as much as other parking lots in the area, because federal subsidies cannot be used to undercut market rates.
