Welcome to World Tofu Day!
World Tofu Day was created by the Society for the Protection of Animals (SPA) Canada to offer an opportunity for people to celebrate plant-based diets and to encourage them to bring animal-friendly foods onto their menus. It celebrates the many alternatives to animal products "and the many advantages of living a cruelty-free lifestyle." It's also a day to get people to try tofu and to view it in a new way, "as a tasty, versatile food that can easily replace many animal-derived products to avoid encouraging the horrible farming industry." The first World Tofu Day was marked in 2014. In Montreal, at least 12,000 people attended a vegan barbecue on the inaugural celebration.
Tofu is made from soybeans that are curdled and then pressed into blocks. It is high in protein, relatively low in calories, and low in carbohydrates. It is low in saturated fat but higher in heart-healthy fats. Tofu contains iron, magnesium, manganese, selenium, and calcium, and is sometimes fortified with other minerals and vitamins. Tofu is versatile. It takes on the flavor of what it is cooked with, it can be used to make anything from the main dish to a dessert, and just like meat, it can be fried, grilled, steamed, baked, or pan-cooked. There are tofu curds, pressed tofu sheets, frozen tofu, and burgers and sausages made from tofu.

Boeheim’s Army gives early scouting report on SU basketball after scrimmage (PS; $; Waters)
Two years ago, Jimmy Boeheim was among the Syracuse basketball players who scrimmaged against the members of Boeheim’s Army.
This past weekend, Boeheim returned to Syracuse for his second stint with Boeheim’s Army, which continues play in The Basketball Tournament on Wednesday night.
Before the tournament got underway, Boeheim and the other members of Boeheim’s Army got a chance to run up and down the court with this year’s Syracuse players at the Carmelo K. Anthony Center.
Since Boeheim played for Syracuse in the 2021-22 season, and given his familial familiarity with the SU program, Boeheim knew the current crop of Orange players better than most of his Boeheim’s Army teammates.
“They all looked good,’’ Boeheim said after Boeheim’s Army had handed Team Gibson a 99-83 loss on Monday at the War Memorial. “It’s early, but I like the way they’re coming together. I’m excited to watch them. Everyone was good. I’m excited to see how Coach Red (Adrian Autry) coaches them up and how they progress in the offseason.’’
Boeheim and a few other players from Boeheim’s Army were asked to give their thoughts on specific Syracuse players. Here’s what they had to offer:
Rakeem Christmas on Naheem McLeod
Rakeem Christmas is a strong guy. He stands 6-foot-10 and there does not appear to be an ounce of fat on his 250-pound frame.
But even Christmas was astounded by the size of Naheem McLeod. The 7-foot-4, 255-pound center transferred to Syracuse this offseason from Florida State. McLeod averaged 3.8 points and 2.7 rebounds in roughly 13 minutes per game last season for the Seminoles.
“He’s big as hell,’’ Christmas said. “That’s a big body down there. He’s going to be real good for us. He’s solid. I tried to go down there and dunk and he stopped me. Not a lot of people do that. That’s saying a lot right there.’’
Jimmy Boeheim on Benny Williams
Benny Williams was a freshman during Jimmy Boeheim’s one year at Syracuse. Williams played sporadically that season. Last year, Williams stepped into a starting role. He averaged 7.2 points and 4.1 rebounds per game. He also made 19 out of 48 (39.6%) of his 3-point attempts.
Boeheim said he noticed Williams had added some strength.
“Benny looks good,’’ Boeheim said. “His shot looks much better. Really smooth. He made a few on us. He’s just playing with a lot of confidence, which I love to see. I know he’s been working really hard. He looks good. His body looks good. I’m excited to watch him this year.’’

While we knew the field for the 2023 Maui Invitational, we officially got the bracket Monday evening. Tennessee, a veteran team that could start three 5th year players, will face off against Syracuse in the first round of the Maui Invitational.
Sometimes in sports, coaches have expiration dates. Jim Boeheim did a lot of great things at Syracuse. He won a lot of basketball games. His style of defense probably needed a change, though. Syracuse had played 2-3 zone for so long, and now, with Red Autry taking the helm, it's an opportunity for Syracuse to make some changes. The Orange won't be exclusively playing zone this year or, from what it sounds like, primarily playing zone. They could end up being a dangerous team, though, with new leadership and development. There's an outside chance that Judah Mintz and J.J. Starling are one of the top backcourts in the country. The two guards were extremely high recruits coming out of high school, and both are expected to take a sizable jump from freshmen to sophomores.
Along with the two guards, Syracuse has some other promising younger players like Justin Taylor, Quadir Copeland, Maliq Brown, and Chris Bell. All of them got a chance at the end of last season to prove themselves, and all showed flashes of brilliance despite the Orange not having a good year. Benny Williams could also be a sleeper for all-conference in the ACC. This year's Maui Invitational is loaded, and Tennessee will have to beat some tough teams to capture a championship. Regardless of a win or loss in-game, the Vols will be playing either Purdue or Gonzaga in game two. On the other side of the bracket are Kansas, Marquette, UCLA, and the host, Chaminade. Tennessee could get three quad-one games in Maui, depending on how the season unfolds.

ESPN viewers might be confused while watching The Basketball Tournament games played this week at Syracuse's Upstate Medical University Arena at the OnCenter War Memorial.
The court is covered with Siena, Metro Atlantic Athletic Conference, MVP Arena and Albany County logos, even though these games in the $1 million TBT are being played in Onondaga County. The Saint Bernard logo is at midcourt.
That's because it's Siena's home court, which was lent to Syracuse for TBT games on Tuesday, Wednesday and Friday in a trade between Upstate Medical University Arena and Albany's MVP Arena.
Both facilities are managed by ASM Global. Upstate Medical University Arena doesn't have a basketball tenant.
"When the NCAA basketball event came to Albany (in March) we worked out an arrangement with them whereby we borrowed the use of 20 additional walk through metal detectors that we used to augment the units we own at MVP Arena so we could have screening devices at all doors to increase the flow for patrons entering the facility," MVP Arena general manager Bob Belber said in an email. "In exchange, the sister building in Syracuse had this basketball tournament booked and they needed a basketball court."
Belber said he asked permission from Siena athletic director John D'Argenio before agreeing to the exchange with Upstate Medical University Arena, which is part of the OnCenter Complex. Belber said Siena's court will be completely repainted after it is used in Syracuse.

Syracuse And Tennessee Paired In Maui Invitational - Syracuse University Athletics (cuse.com)
Syracuse is scheduled to face Tennessee in the first round of the Maui Jim Maui Invitational on Monday, Nov. 24, at 2:30 p.m. ET in Hawaii. The game will be televised on ESPN2. The full tournament bracket was announced on Tuesday.
Six of the eight teams in the field -- Gonzaga, Kansas, Marquette, Purdue, Tennessee and UCLA -- earned NCAA Tournament berths a year ago.

Syracuse native Post Malone met with a local “superfan” who credits the musician with helping with his recovery from a spontaneous brain hemorrhage.
Garrett Belanger got to meet the “Chemical” singer-rapper after his July 17 concert Darien Lake Amphitheater near Buffalo, according to Garett’s sister, Taylor Belanger. Malone gave Garrett a big hug and posed for photos together.
“How are you dude? Hanging out?” Posty asked Garrett in a TikTok video posted by Taylor, who lives in Liverpool.
Malone also showed his support for Garrett by wearing a “Garrett’s Army” T-shirt that the Belanger family made for him.
“G finally met the man himself! Post was an absolute dream, so kind and so genuine. One of the [best] nights of our lives- G is still smiling!” Taylor wrote on TikTok. “The most special night ever.”
‘Best ice cream in America’ title scooped up by Upstate NY shop in viral video challenge (PS; Hernandez)
You may know the best place to get ice cream in your town, but what about the ultimate scoop shop in all of America? One viral content creator set to find out this summer and made the most delicious discovery in Upstate New York.
Cohen Thompson, a Texas A&M student and his band of college buddies, set out on a challenge to find the best ice cream in the nation. They took their over 800k cumulative social media followers across YouTube, Instagram and TikTok along for the journey through 48 states in 48 days, documenting every frosty bite.
One ice cream shop reigned supreme, thanks to its fresh ingredients and unique flavors.
The Spotted Duck Creamery in Penn Yan was crowned the best ice cream in the lower 48 states. Thompson traveled back to the Finger Lakes to present the honor to owner Sam Solomon, with one catch.
The award came with the offer to pit their freshly made flavors against ice cream either Alaska or Hawaii. Solomon accepted the challenge on camera and agreed to go head-to-head with the Aloha state.
According to the Finger Lakes Times, when Thompson asked for suggestions of where to get the best ice cream in New York, Spotted Duck fans commented in droves.
Solomon told the publication that he credits their sweet success to fresh and locally sourced ingredients from the mint picked the day it’s mixed in, milk from the cows down the road, and eggs produced from the Ancona ducks on the premises among other homegrown supplies.
