Vinegar is produced either by a fast or a slow fermentation process. Slow methods are generally used with traditional vinegar and the fermentation proceeds slowly over the course of months or up to a year.

Syracuse Football: Should the Clemson Tigers be worried? (insidetheloudhouse.com; Edsen Jr)
I will break that question down for you but the Cliff Note version is YES! Before you choke on your beer, let’s examine the Orange’s season.
For the uneducated Clemson fan (which by the way applies to them before and after graduation; just kidding). They would look at the Orange’s record and schedule and look right past us as they look to pencil in plans for being in the College Football Playoffs.
Not so fast my friends. First of all Syracuse’s schedule is in the top-10 in the nation for this year (ranking 8th). Clemson who scheduled two (the maximum allowed to be eligible for a bowl game) ham and egg opponents (Troy and South Carolina State). Yes South Carolina State who has Bethune-Cookman University and North Carolina A&T State University on their schedule. I’ve been unable to confirm this, but I believe they also had ITT Tech on their schedule before that school disintegrated. But seriously Clemson only beat Troy by six points!

Clemson quarterback Deshaun Watson isn't dwelling on how the third-ranked Tigers pick up their wins, just as long as they continue to be successful in the end.
It has been a frenetic month of mid-game mistakes and lasts-minute rallies for the Tigers (8-0, 5-0 Atlantic Coast Conference), who pulled off their latest escape Saturday night in a 37-34 win at Florida State.
Clemson has needed dramatic comebacks in three of its four October games, including in signature wins over No. 5 Louisville and the 19th-ranked Seminoles . In Watson's view, the end justifies the sometimes sloppy means in the Tigers second straight 8-0 start.
''Players make plays, this is what we are built for,'' Watson said Monday. ''We practice this every Wednesday, being down and having the opportunity to win the game.''
Clemson hopes to start a more dominating run to the finish the regular season, starting with Saturday's home game against Syracuse (4-4, 2-2). The Tigers have beaten 3-0 against the Orange since Syracuse joined the ACC.
The Tigers have had their share of heart-stopping finishes so a comfortable victory would be welcomed.

Plan for live tiger for Massillon (Ohio) football game thwarted (usatoday.com; AP)
A football team that had a live tiger cub mascot on the sidelines for decades before Ohio cracked down on exotic animal ownership will have to wait to repeat the tradition.
Boosters for Massillon’s Washington High School had said a live tiger would be brought in from Syracuse, N.Y., for last Saturday’s rivalry game against Canton McKinley. Booster club president Matt Keller tells the Independent in Massillon that didn’t happen because there were logistical and staffing problems.
Ohio’s rules enacted several years ago included an exemption for Massillon’s “Obie” mascot under certain stipulations. Boosters had trouble meeting those requirements, so the live mascot has become a rarity.
The booster club had said the estimated $2,000 cost for bringing a tiger from Syracuse would be paid through donations.

Current Position: Head Coach - Syracuse
For many college football fans, Dino Babers is still not a household name despite making 15 coaching stops since 1984. The first-year Syracuse head coach spent the previous fours years leading Bowling Green and Eastern Illinois.
He is best known for being an Art Briles' disciple, coaching their receivers and transforming Baylor into a recruiting power. He's only 4-4 at Syracuse but has dramatically altered the culture of the program and has them flirting with just their fourth bowl appearance since 2005.
He's not the huge name Vols' fans want but they'll surely love his offensive creativity.

ACC football power rankings: Week 10 (tomahawknation.com; Weiler)
With nine weeks in the books, the ACC picture is beginning to look a lot more clear with regard to which two teams will travel to Orlando to take part in the ACC Championship game. In fact, both frontrunners went on the road and brought back huge road wins in week nine to further cement their spots. But how does the rest of the conference look?
1. Clemson (8-0, 5-0, no change from last week)
It wasn’t always pretty but when push came to shove, the Tigers came away with a win in Tallahassee for the first time since 2006, defeating Florida State 37-34. The Clemson defensive line looked the part of the best unit in the country and singlehandedly clinched the game and Deshaun Watson’s Jekyll and Hyde season continued as he added a pair of interceptions to his exceedingly high season total but also made some spectacular throws in key situations.
Next up: With FSU in the rear-view mirror, Clemson has to lose two of its final three conference games to drop from atop the Atlantic Division standings. The first of those three is Saturday at home against Syracuse.
2. Louisville (7-1, 5-1, no change from last week)
In a continuation of the Cardinals’ up-and-down month, they fell behind early on the road against a sub-.500 Virginia team, needing a last-minute touchdown drive to survive and remain in the College Football Playoff discussion. Lamar Jackson continues to be the Heisman frontrunner and his game-winning touchdown pass is just another Heisman moment for the sophomore quarterback.
Next up: UL stays away from home this week, traveling up to Chestnut Hill for a noon matchup with Boston College.
3. Virginia Tech (6-2, 4-1, no change from last week)

9. Syracuse (4-4, 2-2, no change from last week)
The Orange’s red-hot progress came to a screeching halt last week as they were on bye after back-to-back conference wins. Quarterback Eric Dungey and wide receiver Amba Etta-Tawo continue to impress but the Orange needs two more wins to become bowl-eligible and the remaining slate is extremely tough.
Next up: That challenging stretch of games kicks off Saturday when Syracuse travels to Clemson to take on the No. 3 Tigers in their house.

Coyle discussed the soccer team’s Big Ten regular season title, the state of the football team and the upcoming wrestling season, among other topics.
The soccer team won a share of the Big Ten title Wednesday, marking your first title as AD. How does that feel?
All titles feel great. I was excited for [head coach Stefanie Golan] and those young ladies. They’ve worked incredibly hard all season. had a chance to be out there [Wednesday night] and see the excitement that they have … but obviously they have bigger goals in mind. The Big Ten Tournament is starting on Sunday … I know they’re excited, but they also have their eye on a bigger goal, which is a great place to be.
With the men's basketball season about to get underway, how would you describe the state of the men's basketball team?
I’ve been really appreciative with how hard they’ve worked over the summer, and I’m not talking about on the court … they did a lot on the student-athlete development side. [Head coach Richard Pitino] and his staff brought in a lot of speakers to talk to the team. I think those things were important, but make no mistake — the season’s getting started, and people pay attention to how we perform on the court as well. … We got a strong recruiting class. Coach Pitino has talked about that strong recruiting class, so I’ll be anxious to get started and see what they do on the court.
Same question with the women’s basketball team. What did you see from them over the summer?
… I’ve been here five months now, so I’ve had a chance to get to know [head coach Marlene Stollings … and our other coaches. I love the passion and commitment they have for our program. had a chance to go to the scrimmage on [Saturday] after the Homecoming football game and watch both teams. Our women’s team lighted it up with a lot of points, which was great to see. But again, I know they’re excited to get started, and I’m excited to watch and support and do everything I can to help them accomplish the goals they have.

What we learned in NC State's tough loss to BC (technianonline.com; Candeloro)
Flashback to a time when Jameis Winston was leading the Florida State Seminoles and “The Hunger Games” was the top-grossing movie in the box office. Flashback to November of 2014. This was the last time Boston College won an ACC game.
Since then, Donald Trump has become a presidential candidate, Winston became the No. 1 overall pick in the draft and college football adopted and executed two playoffs.
The Eagles had a 12-game losing streak in the ACC before NC State let them off the hook. With its 21-14 win over NC State on Saturday, both teams pulled to 4-4 on the season.
After a terrible weekend in Raleigh, here's what we learned.
1. The Wolfpack is probably not bowling in 2016
Let's face it, the Wolfpack has home games against Florida State and Miami (FL) plus road games at Syracuse and North Carolina, and it is very hard to imagine a scenario where the Wolfpack pulls two wins out of the hat.
The good game against Clemson is a distant memory, replaced by a nightmare in which the Wolfpack lost to the worst team in the ACC. Boston College beat UMass, Wagner and Buffalo this season, a schedule that makes NC State's recent nonconference schedules look like the SEC West. Unless something drastically changes in the final four games, NC State won't even be worthy of the Quick Lane Bowl in scenic Detroit.
2. The Wolfpack offense is anemic
NC State has failed to top-20 points in three straight games and now has the 79th ranked offense in the nation, averaging just 26.8 points per game. The Pack is inexplicably 99th in rushing yards per game this season, despite having senior running back Matt Dayes and junior tight end Jaylen Samuels. The blame for this loss falls on the Wolfpack offense, who failed to take advantage of a favorable matchup at home.

Now open: Toss 'n Fire wood-fired pizza sets up shop in North Syracuse (video) (PS; Cazentre)
The Fig 'n Pig, Cheeky Monkey and 'Cuse Salt Potato pizzas now have a permanent home.
For two years, Nick Sanford has taken those and other wood-fired pizzas on the road with his two Toss 'n Fire mobile units, or food trucks. On Saturday, Toss 'n Fire opened a "brick and mortar" location, at 315 N. Main St. (Route 11) in North Syracuse.
While the mobile units will remain on the road taking pizzas across Central New York, the North Syracuse restaurant allows Toss 'n Fire to expand it menu.
"What we have is six or seven of the favorites that we've developed on the mobile unit, added some appetizers and other Italian specialties that we have the room for here," Sanford said. In addition to pizza, the North Syracuse restaurant offers calzones and stromboli, salads and appetizers, including arancini (risotto balls), Utica Greens and wings. The wing flavors include honey sriracha andCheeky Monkey, made with the spicy tomato dipping oil of the same name made locally. See the menu.
