This seems to be fitting for St. Patrick’s Day in the United States. To “corn” something is simply to preserve it in a salty brine (the term corn refers to the coarse grains of salt used for curing). Corned beef is a salt-cured beef product. In the traditional Irish Corned Beef and Cabbage recipes, salt pork or bacon joint was used instead of corned beef. Sometime in the mid-1800s when the Irish immigrated to America, they found that Jewish corned beef was very similar in texture to bacon joint (pork). It was then that corned beef was used as a replacement for the bacon when preparing corned beef and cabbage meals. Soon after, Irish-Americans began having Corned Beef and Cabbage on St. Patrick’s Day. Corned beef and cabbage remains a popular food in many areas of the United States. SU News Syracuse football spring practice preview (defensive line) (PS; Mink) ... The defensive line is a good place to start when talking about the defense, as it's the first line of defense -- and a group with a lot to improve upon heading into the 2017. Here are the three biggest the Panthers hope to answer. 1. Hello, defense: There is no denying that the Pitt defense last season was difficult to watch, most especially in the secondary. Pitt gave up way too many big plays, points and yards, surviving most of its victories in shootout fashion (and losing a few in the same way). Shoring up the back end is a priority this spring, and the hope is that a healthy Jordan Whitehead can help lead the improvement. Avonte Maddox and Phillipie Motley also return, and more will be expected of Damar Hamlin, one of the best recruits Pitt signed in 2016. The questions extend beyond the secondary, though. Pitt must find a way to replace Ejuan Price, who led the team the last two seasons with 24.5 sacks. 2. Hello, quarterbacks: With USC transfer Max Browne participating during the spring, the assumption is that he will eventually be named the starter to replace Nathan Peterman. Ben DiNucci and Thomas MacVittie are also in the mix. "There's a lot of competition at that quarterback spot," Narduzzi said during a news conference to preview spring practice. "I feel like we got four guys that are going to compete at quarterback. We didn't have that competition a year ago, but even if Nathan was back this year, there'd still be competition. We didn't have that a year ago. We had really one guy, just hoping he stayed healthy. He didn't in that bowl game, and we saw what happened." ... Pittsburgh Panthers 2017 Spring Football Preview (athlonsports.com; Kinne) This will be Pat Narduzzi’s third spring practice as the head coach at Pittsburgh. The former Michigan State assistant has brought stability to a program that needed it in the worst way. But Narduzzi knows that his job is far from done. He loses several important pieces from last year’s team and has not had the personnel on defense to make his scheme truly effective. This spring will be another step in building the Pitt program in his image. 5 Storylines to Watch During Pitt’s Spring Practice 1. Max Browne The former five-star recruit that left USC after losing his starting job to Sam Darnold comes to Pittsburgh as a graduate transfer. Browne has the tools and is expected to be Nathan Peterman’s replacement, though redshirt freshman Thomas MacVittie may be the long-term answer at the position. Browne needs to develop a rapport with his offensive line and receivers over the next few weeks. 2. Qadree Ollison The 6-foot-2, 230-pound running back had a very good freshman season in 2015 after star running back James Conner went down. When Conner returned to action last fall, Ollison disappeared. The Panthers need Ollison to step it back up with Conner off to the NFL. Sophomores Darrin Hall and Shawntez Moss also will have big roles, but a rejuvenated Ollison should be the primary ball carrier. 3. Another New Offensive Coordinator Matt Canada did an outstanding job in 2016 in his only season running the Pittsburgh offense. The Panthers finished No. 38 in total offense and No. 10 in scoring offense and Canada did so well that he was hired by Ed Orgeron to take the same position at LSU. New offensive coordinator Shawn Watson has had an up-and-down recent run. After helping head coach Charlie Strong develop Teddy Bridgewater into a first-round NFL Draft pick at Louisville, Watson was let go by Strong at Texas during the 2015 season. ... When his time on center stage came, he seemed no less relaxed. A few balls missed their targets, but not many. Watson had nearly the entirety of his Clemson offense to work with, too, as Mike Williams, Artavis Scott, Wayne Gallman, Jordan Leggett and even center Jay Guillermo worked out, too. Watson took snaps from under center, something he rarely did in college. He zipped deep balls downfield, including a few nifty pitch-and-catch routines with Williams and Scott. He whizzed throws on out routes, showcased his footwork in drills, and while his consistency figures to continue to be a critical concern leading up to draft day, he proved his physical skills are worthy of an early selection. ... Other Best cheap eats in the Syracuse area: 19 dishes to get for $5 or less (PS; Pucci) Best cheap eats in the Syracuse area: Where to get a bite for $5 or less Eating well around Central New York isn't hard, but what about eating well around CNY for under $5? Turns out, that isn't so hard either. This is our list of top dishes, from baked goods and burgers, to pork tacos and Vietnamese sandwiches. No drive-thrus are included. You might notice we didn't include any pizza on our list. Why? Because just about every slice of pizza you eat is under $5. Thus the debate would be over which pizzeria is the best, but that's a conversation for another day. Here are our picks. The meat and pate are rich and fatty, while the pickled carrot, diakon radish, cilantro and chilies are fresh and light. It's all held together by a warm, crusty roll.
