Welcome to Chop Suey Day!
This is a day for the American Chinese dish, chop suey. It usually consists of a meat—such as pork, beef, shrimp, chicken, or fish—and eggs, which are quickly cooked in a sauce with vegetables like cabbage, celery, and bean sprouts. It is usually served with rice, but stir-fried noodles may be added. In Cantonese, a Chinese language, its name literally means "odds and ends". There are so many conflicting stories of its origin, that no one really knows where it came from. Most believe it was invented by Chinese Americans. Some say it was made by those working on the transcontinental railroad, or for miners by a Chinese cook in San Francisco. Some claim it was made by the chef of a Chinese official who was visiting the United States in 1896, or that the official wandered into a Chinese restaurant and the chef there came up with it for him using leftovers. A few have also claimed that it is based off a dish from Taishan, a Chinese county in Guangdong province. No matter where it got its start, it is now a prominent food in American Chinese cuisine.

SU football coach Dino Babers discusses season opener against Central Connecticut (localsyr.com)
The Syracuse University football team is set to begin the 2017 campaign this Friday when it hosts Central Connecticut at the Carrier Dome.
The Orange is coming off of a 4-8 season – its first under head coach Dino Babers.
On Monday, Babers discussed the season opener with local media.

New York State Fair breaks another attendance record Monday (PS; O'Toole)
The New York State Fair had another record-breaking day.
Fair officials say 88,943 people attended the fair Monday. That's 3,232 more than the previous record of 85,711, set in 2011.
Clear skies and mild temperatures on the first of two Senior Days (anyone 60 years or older get into the fair for free Monday and Tuesday) helped draw large crowds, fair officials said. Monday's attendance was nearly 7,000 higher than the same day last year, fair spokesman Dave Bullard said in a news release.
"With more than half of the Fair to go -- and its traditionally heaviest weekend ahead of it -- more than half-a-million people have come through the gates," Bullard said. "For those of you scoring at home, it's 523,685."

"This is the second daily record set during the 2017 Fair, one behind the three daily records set last year," Bullard said. "Of course, last year also set the total attendance record (1,117,630).
