Welcome to National Croissant Day!

Today we celebrate a crescent-shaped pastry with a flaky crust, the croissant! Usually made with sugar, salt, flour, milk, eggs, and butter, croissants originated in Vienna, Austria. There are different variations of them, and they can be found all around the world.

Their precursor was the kipferl, a crescent-shaped roll. Kipferls can be plain or have nuts or other fillings, and are made with lots of butter and lard. They are not as flaky as croissants, having a softer and denser dough. They date back to the thirteenth century, when they were eaten as sweets. By the mid-sixteenth century, they became a breakfast food. During the seventeenth century, puff pastry, the dough that would later be used in croissants, began being used in pastry recipes.

The history of croissants is steeped in legend. One legend says that croissants were first made in Buda, the ancient capital of Hungary that is now the western part of Budapest, to celebrate the victory of the Franks over the Umayyads at the Battle of Tours—which happened back in the eighth century. The shape was said to represent the crescent moon of Islam.

Syracuse adds pair of 3-star quarterbacks to class of 2020 class (DO; Majumder)

On Tuesday, 3-star Dillon Markiewicz became the second Syracuse quarterback commit to Syracuse for the class of 2020. Jacobian Morgan was the first when he revealed his verbal commitment to the Orange two days prior.

Markiewicz is listed as a 3-star pro-style quarterback on 247sports.com from McKinney, Texas, just north of Dallas. He’s the 280th ranked prospect in Texas per 247sports’ composite rankings which aggregates multiple ranking sites. Markiewicz chose the Orange over Boise State, Texas State and Stephen . Austin, according to 247 Sports.

Excited to announce I have committed to further my athletic and academic career at Syracuse University! #JUICEDUP

— Dillon Markiewicz (@Dmarkiewicz4) January 29, 2020

The 6-foot-4.5, 215-pound quarterback threw for 4,187 yards his senior year with 52 total touchdowns and six interceptions in 12 games, per his Hudl.com page.

Markiewicz’s McKinney North team went 10-2 last season, losing in the second round of the playoffs. In that final game, Markiewicz threw for 282 yards and two touchdowns but added three interceptions in a 58-28 loss, per MaxPreps.com.

Syracuse’s other quarterback commit, Morgan, is also a 3-star pro-style quarterback per 247sports. He was the 50th ranked Mississippi prospect for the class of 2020 on 247sports’ composite rankings. Morgan had offers from Jackson State and Austin Peay and also plays wide receiver.

— Jacobian Morgan ‘20 (@jacobian_morgan) January 27, 2020

Morgan recorded 2,487 yards his senior year to go along with 30 touchdowns, per his Hudl page. He declined to share his interceptions in his senior highlight video on Hudl, but MaxPreps listed seven.

Both join Tommy DeVito and Rex Culpepper SU’s quarterback depth chart. Clayton Welch, DeVito’s backup last season, is set to graduate this fall.

Syracuse Football: 3 biggest disappointments from 2019 season (saturdayblitz.com; Hanich)

In 2018, Syracuse football one of the most surprising teams in the nation. In 2019, the Orange were among the most disappointing.

Last season was the best for Syracuse football since 2001 when they also went 10-3. Like the previous time when they encountered a 10-win season, the next season they proceeded to finish with a losing record. The 2019 season was a rough season for the Orange as they finished their season with a 5-7 record.

The Orange were able to get their first taste of success in 18 years, but they could not keep that feeling moving forward. They were projected to win nine games and finish second in the Atlantic Division behind the Clemson Tigers.

Many areas caused them to drop from 10 wins to only five in only one season. One of the most significant factors was the way that the team could not replace players that have departed after the previous season.

Despite the departed players, many factors caused an overall disappointing 2019 season. They reflected from both the offensive and defensive side of the ball from the poor performance and poor coaching.

Here are the three biggest disappointments for the Syracuse Orange this past season.

3. Inefficient offensive line

The Orange knew they needed to replace much their impact players, primarily on the offensive line. They needed to replace two offensive tackles, who started a majority of last season. This past season, youth played a huge factor in the inconsistencies of an offense that was only ranked 69th in points per game (28.3) and 72nd in total yards accounted for per game (394.6).

Syracuse Football: Sterlin Gilbert helps Orange land 2020 Texas QB (itlh; Esden Jr)

Syracuse football has landed another QB recruit for the 2020 class thanks to Sterlin Gilbert. Here are all the details and what it means.

Last week Syracuse football was staring at an underwhelming quarterback room with zero commits for the 2020 class.

Now the Orange has two fresh QBs after securing a 2020 Texas quarterback late on Tuesday night. Earlier this week Syracuse received a commitment from Jacobian Morgan (full details here).

Dillon Markiewicz is a three-star pro-style quarterback who stands in at 6-foot-4, 215 pounds.

So how did Syracuse football land a big-time Texas quarterback? Sterlin Gilbert.

Gilbert was hired as the offensive coordinator and quarterback coach formerly of Texas and of South Florida. Sterlin is the only former quarterback on the coaching staff and he’s paid immediate dividends on the recruiting trail.

In an interview with Mike McAllister of Cuse Nation, Dillon had this to say:

“Great coaches. Amazing opportunity to work with coach Gilbert and be part of putting Syracuse back on top.”

Syracuse wrestled him away from Stephen . Austin and held off a late push from Boise State.

So how good is he? McAllister shared a bit of his scouting report via Cuse Nation:

“During his senior season, his first as a full-time starter, Markiewicz completed 224 out of 313 passes (72%), threw for 4,187 yards, threw for 45 touchdowns to just six interceptions and ran for seven more scores. Watching his senior highlight tape, Markiewicz shows a strong arm, has accuracy and touch on his deep ball, throws accurately on the run and shows solid footwork in the pocket. There is a lot to like about his upside, and that makes it even more amazing he has not received more recruiting attention.”

All-ACC TE Carl Tucker Announces Transfer Decision (thespun.com; Rasvoglou)

Last weekend, North Carolina tight end Carl Tucker spent time visiting Alabama. Clearly the graduate transfer liked what he saw down in Tuscaloosa.

Tucker spent five years with the Tar Heels, totaling 36 receptions for 549 yards and four touchdowns. Prior to his visit with Alabama, he took the time to see what Florida State had to offer.

Not even a week after his visit with the Crimson Tide, Tucker came to a decision. The former North Carolina tight end has committed to Alabama.

The reason that Tucker even went to visit Alabama is because he’s enamored with the program’s success. After all, Nick Saban always has his players in position to contend for a national championship.

Now, the former three-star recruit from William Amos Hough High School has the opportunity to play for one of the greatest coaches in college football history.

Tucker announced his commitment on Twitter.

ESPN: Miami Hurricanes OC Rhett Lashlee potential 2020 ACC impact coordinator (caneswarning.com; Rubenstein)

In an article highlighting the “College football coordinator moves that will impact the 2020 season” ESPN senior writer Adam Rittenberg projects that new Miami Hurricanes offensive coordinator “Rhett Lashlee could be the impact coordinator hire in the ACC” for 2020.

Miami Hurricanes head football coach Manny Diaz hired Rhett Lashlee from Southern Methodist as the offensive coordinator after one year with Dan Enos was largely a failure. Lashlee promises to speed the tempo and go to a more modern spread offense in 2020. Enos operated a more antiquated pro-style offense in 2019.

The Miami Hurricanes offense has seen more changes entering the 2020 season than Diaz bringing in Lashlee to create an offense to match his assertive, aggressive defense. Butch Barry was not a good fit with Lashlee as the offensive line coach. Garin Justice who was the OC at UNLV was brought in to replace him.

Wide receivers coach Taylor Stubblefield left to accept the same position at Penn State. Diaz and Lashlee have yet to replace him. Among the leading candidates are reported to legendary Miami wide receiver Lamar Thomas and current director of recruiting David Cooney. Upgrading the play at WR will be critical for Miami in 2020.

Lashlee comes to Miami with an impressive pedigree of playing for Auburn head coach Gus Malzahn in high school. The former Arkansas QB was an offensive coordinator at Auburn under Malzahn and had the same position at UConn and SMU. Lashlee is tasked with improving a moribund Hurricanes offense.

“Rhett Lashlee could be the impact coordinator hire in the ACC, as his arrival at Miami coincides with the Hurricanes adding quarterback transfer D’Eriq King from Houston.

Quarterback play has been Miami’s biggest problem for years, but King is a proven playmaker who should thrive in Lashlee’s offense, which averaged 41.9 points and 309 pass yards per game in 2019.”

Clemson is in Jeff Scott’s blood, and USF is getting a transfusion (orlandosentinel.com; Knight)

The Clemson alumnus with the Clemson bride and Clemson coaching pedigree packed every transferable element of Tigers football and hauled it to his new digs in Tampa.

Lock, stock and binder.

Perched conspicuously on the expansive brown desk in new USF coach Jeff Scott’s sparsely decorated office is the 2019 edition of Clemson’s “All-In” manual, a three-ring behemoth that might make Tolstoy cringe.

Roughly 8 inches in thickness, it covers every molecule of the Tigers culture under Dabo Swinney, from team rules to philosophy to strength and conditioning guidelines to practice schedules. Everything.

ACC Transfer Portal Update - 1/30/20 (RX; HM)

ACC Transfer Portal Update - 1/30/20

First: OX_VT continues to do outstanding work like this amazing infographic showing transfer portal traffic into and out of the ACC - thank you, OX!

College football recruiting in 2020 - the transfer portal - Currently 106 ACC players are either in the transfer portal or have already transferred - 20 players have transferred into ACC schools

— OX (@OX_VT) January 25, 2020
Second: Every single ACC team lost more players than they gained through transfer except for Syracuse, which is breaking even so far. Three teams - Duke, NC State and Virginia Tech - are running double-digit net losses.

What does this all mean? Are teams losing stars... or bench warmers? I think the answer, as usual, is "a little bit of both".

For example, take the 11 NC State players who tossed their names in the portal this year. Two have already decided to stay with the Wolfpack. More to the point, none (so far) have gone on to another P5 team; the most impressive team any NC State player has transferred to so far has been OLB Brock Miller (a 3-star), who is going to Boise State. Most of these appear to be playing time issues.

What about Virginia Tech? The Hokies have lost WRs Dejuan Ellis to Maryland and Damon Hazelton to Missouri, but also picked up a pair of P5 running backs in Raheem Blackshear (Rutgers) and Khalil Herbert (Kansas) - both 3-star RBs. The rest (again, so far) have all transfered to FCS programs - presumably for more playing time.

Is this a bad thing? Not necessarily. Think roster churn. Think oversigning and max recruiting class sizes. It's a brave new world for coaches who can embrace it.

A six-pack of worthy beers from CNY Brewfest (Beer review) (PS; Paventi)

The longest running beer festival in Central New York marked its 24th anniversary last weekend. CNY Brewfest took one step closer to its silver anniversary with a slightly different format, a host of new breweries, and enough hazy IPAs, pastry stouts and funky sours to keep everyone happy.

CNY Brewfest has shifted its dates around over the past few years. For nearly two decades, it held court on the Saturday prior to the Super Bowl. This year’s Syracuse University basketball game against Duke on Feb. 1 pushed the event ahead one week.

Also new this year was a Friday evening VIP session. Rather than giving VIPs early entrance and access to limited edition beers, festival organizers put together a smaller scale party featuring highly sought after and rare beers from Hudson Valley Brewing Co., Other Half Brewing Co. and Suarez Family Brewery, among others.

This year, our plan of attack was simple: Seek out Upstate New York beers we have never tried and breweries doing innovative things. Here’s my six-pack of Upstate beers from the CNY Brewfest.

Aurora Brewing Co. Hermitage

This recently released number was a treat. It’s part of a series where the brewers will attempt to deconstruct a style of wine. Hermitage is a sour black IPA meant to serve as an examination of Syrah wine. It’s brewed with milk sugar, blackberries, blueberries, plums, cherries, smoked sea salt, white pepper, lavender and hops. The smoked salt, pepper and lavender each pronounced themselves individually, complementing the sweetness of the berries and tart plums and cherries.

Garland City Beer Works Hop & Circumstance Chinook NEIPA

We didn’t drink many hazy IPAs at CNY Brewfest, but we made it a point to see what Garland City was pouring. I’ve really been impressed with its beer at the last few festivals. It had all of the hallmarks of a New England IPA, being hazy, heavy and juicy. The use of Chinook hops stood out for me, with bitter grapefruit flavors and some spicy notes that made it stand apart from the other juice bombs being poured.
