Beef tongue, whitefish and knishes. And matzo ball soup. Matzo ball soup isn’t part of my food heritage, as a third-generation Italian-American kid from Liverpool. It is something I developed a liking for after years of visiting the New York City area. Touch of Broadway starts with a housemade chicken broth, evident by a few grease spots floating at the top. Not too fatty or salty, carrots and broad noodles steeped in the broth to impart flavor and mouthfeel. At the center of the bowl was a gigantic matzoh ball, which is difficult to explain to someone that has never had one. Imagine a ball of cornmeal without any corn flavor. The ball itself is made from crushed unleavened bread, never losing its shape while floating in the takeout container during my drive home to Camillus.
