The real origin of tartar sauce remains unclear. Some say that it has been in existence since the Roman era, while others insist that tartar sauce originated from France. A few maintain that the French evolved the condiment. The current tartar sauce originated in France as sauce tartare. It is spelled as ‘tartare sauce’ in some parts of Europe, South Africa, and Australia.

Tartar sauce is mainly made from mayonnaise with pickles, capers, herbs, and in some recipes, hard-boiled eggs or lemon juice. The recipes differ in different places to accommodate individual tastes and preferences. The sauce is made as a condiment to be enjoyed with seafood. The best seafood choices are cod, salmon, haddock, shrimp, and pollack. Tartar sauce became commercially available in the 1920s, making it easier to get it at grocery stores, rather than making it from scratch.

2023 NFL Draft prospect profile - Matthew Bergeron, OL, Syracuse (bigblueview.com; Pflum)

The New York Giants hope to have their bookend offensive tackles for the foreseeable future. So they aren’t likely to be looking at offensive tackles in the 2023 NFL draft.

However, the NFL as a whole is somewhat starved for starting offensive linemen in general and offensive tackles in particular. Syracuse offensive tackle Matthew Bergeron has started 39 straight games, playing both left and right tackle, and has been one of the top offensive linemen in the ACC.

He also has a versatile frame that could allow teams to move him inside if necessary or if he isn’t able to stay at tackle. Could that give him a broad appeal to the NFL?

Syracuse offensive tackle Matthew Bergeron has a versatile combination of size, strength, and athleticism to play on the offensive line at the NFL level.

Bergeron has a stout build at 6-foot-4 ⅞ inches, 323 pounds, with good thickness in both his upper and lower body. He carries his weight well and doesn’t seem encumbered by his size, with natural flexibility in his lower body. Bergeron is a natural knee bender who sits easily into his stance and maintains his hip and pad level throughout the rep. He routinely plays with good leverage as both a run blocker and pass protector.

Bergeron has good initial quickness out of his stance, allowing him to move quickly off of the snap and hit his landmarks. He also has quick feet when moving laterally and is able to mirror most speed rushers off the edge, redirect to counter inside moves, or deal with twists or blitzes. His foot quickness also allows him to use his footwork to absorb bull rushes from power rushers.

College sports in 2023 is an ever-changing environment, and that is the case for the Syracuse Orange and others around the country.

With smaller colleges sometimes being competitive with bigger schools, some athletes go pro after one year while others get Covid years, the transfer portal is a regular thing without having to sit out a season and name, image, likeness, or NIL as some call it, is a benefit for players and becoming bigger yet also controversial.

But as controversial as the NIL issue is, it also represents opportunity. An opportunity for players to earn money for themselves, their future and possibly their family. It’s also an opportunity for schools to attract recruits as well as keep players wanting to go the professional route for the money.

So as some players consider their options, I’m left to wonder what if local businesses/sponsors explored opportunities to keep more popular players at the Syracuse Orange longer? What if players were able to make comparable money to a professional career while still attending Syracuse University to get a degree at the best university in the country?

What if they can earn that degree to help their future after sports while still able to send money home to help their family or just live comfortably enough to not feel like big brother is breathing down their neck if they want a meal or something?

No matter the odds, Otto Zaccardo isn’t losing hope.
Ever since he earned a football scholarship with Syracuse University in 2019, the former Lincoln-Sudbury gridiron star has set his sights on doing one thing: playing in the National Football League (NFL).

“It’s a long shot for sure but there is a slight possibility,” Zaccardo, 26, said. “You can’t win the lottery if you don’t play.”

On Saturday, Zaccardo found himself in Houston for a private workout with the United States Football League (USFL) — the latest iteration of the professional football league that plays its games in the spring.

Zaccardo hopes his tryout left a good enough impression to have one of the eight USFL teams sign him. He then hopes the game tape he compiles from the USFL will serve as a springboard for a shot in the NFL.

“If you shoot for the moon and miss, you still end up in a pretty good spot,” Zaccardo said. “So I’ve always tried to set lofty goals and do everything I can possibly do to accomplish them.”

Betting on himself

Following a standout three-sport (football, basketball, track and field) career at Lincoln-Sudbury, Zaccardo (class of 2015) really wanted to play Division I college football.
So the Sudbury resident took a post-grad year at Worcester Academy but played in just two games for the Rams due to an injury. Syracuse ended up being the only school from a Power Five conference to offer him a spot as a walk-on.

“I took it and bet on myself,” Zaccardo said.

Ernie Davis, the “Elmira Express” who was the first black player to win the Heisman Trophy in 1961, came from humble beginnings, but persevered into prominence and the history books.

As we reflect on Davis during Black History Month, his life — cut too short at 23 — had an impact that much beyond the gridiron.

Born Dec. 14, 1939 in New Salem, Penn., he grew up poor in the coal-mining town of Uniontown, some 50 miles outside of Pittsburgh, raised by his mother, stepfather and grandmother.

The family moved to Elmira when he was 12 and soon after, his athletic talents started to blossom. He played baseball, basketball and football at Elmira Free Academy, earning high school All-American honors in the latter two sports, though some thought baseball might be his best sport.

Davis led the school’s basketball team to 52 consecutive victories, but his first love was football.

The Ole Miss Rebels are expected to hire former Syracuse Orange offensive coordinator Sterlin Gilbert as an analyst, according to On3Sports.

Ole Miss coach Lane Kiffin appears to have his eyes set on a veteran assistant who has moved frequently since the 2016 season.

Gilbert was the offensive coordinator for the Texas Longhorns in 2016 and the USF Bulls from 2017-18 before spending 2019 as the coach of the McNeese State Cowboys. Gilbert led McNeese State to a 7-5 record in his lone season at the helm of the Cowboys.


Gilbert was then hired by Syracuse in January 2020 as offensive coordinator and was not retained following the 2021 season. Syracuse posted an overall record of 1-10 in 2020 and 5-7 in 2021.

Gilbert is best known for getting the most out of former USF quarterback Quinton Flowers in 2017 when he helped lead the Bulls to a 10-2 record. As a senior, Flowers threw for 2,911 passing yards, 25 touchdowns, and six interceptions with a 142.1 passer rating. The dual-threat quarterback also totaled 196 carries, 1,078 rushing yards, and 11 touchdowns that same year.

$7M makeover of iconic Syracuse building hits a preservation snag: wrong windows (PS; $; Moriarty)

A dispute with preservationists over the design of replacement windows is threatening to halt a long-awaited multimillion-dollar renovation of Syracuse’s historic Mizpah Tower into apartments, office and event space.

Local attorney and real estate developer Tom Cerio replaced 120 original wood casement windows on the upper floors of the former First Baptist Church building on Columbus Circle with double-hung vinyl windows.

Problem is, the Late Gothic Revival style building is in the city’s Columbus Circle Historic District. That means any changes to its exterior must be approved by the Syracuse Landmark Preservation Board.

Cerio spent $175,000 replacing the windows more than a year ago without asking the board for permission. Last month, he applied retroactively for a certificate of appropriateness for the 120 new windows already installed and for 20 others still to be replaced.

But the board voted 7-0 on Feb. 16 to reject his application. It said the design, appearance and vinyl material of the new windows were out of character with the historic look of the former church, which opened in 1914 and served as its home until the congregation moved to the suburbs in 1988.

Pull open the fish-shaped door handles of Clam Bar’s entrance, and you’ll be transported from the busy North Syracuse intersection to a seafood restaurant by the water. At least it feels that way when customers step inside the eatery that’s been a local favorite since 1965.

As the name would suggest, Clam Bar specializes in seafood dishes, but is well known for a few other plates as well. Meeting for lunch on a Friday, three of us set our sights on something from each land, sea and air, to see what dishes really stood out.

We eased into the comfortable atmosphere by grabbing a booth by the bar. Our waitress warmly greeted us to take our drink orders: a simple but tasty nautical-themed White Cap ($7), and a couple nationally-popular draft beers ($5 and $6).

When you go to Clam Bar, you order clam chowder. And the chicken wings have been a long-standing favorite.

Our waitress put the order in while we decided on our entrees, carefully choosing a variety that we could share. We decided on a Fresh Haddock Sandwich ($13.49), Linguini with White Clam Sauce ($13.25), and the Clam Bar Famous Steak Sandwich ($10.99).
