Welcome to National Nachos Day!

It’s finally National Nachos Day! Nachos are a popular Mexican dish that can be served as a snack, appetizer, or main course. The perfect recipe for nachos includes a huge plate of stacked tortilla chips topped with lots of melted cheese, salsa, sour cream, jalapenos, and guacamole!

Nachos originated in the city of Piedras Negras, Mexico. One night in 1943, the wives of ten U.S. soldiers stationed at Fort Duncan arrived at a restaurant called Victory Club after it had already closed for the evening. Restaurant employee Ignacio "Nacho" Anaya quickly put together what he had left in the kitchen for the women, and called the dish "Nachos Especiales." Word about this tasty treat quickly spread throughout Mexico and Texas. Anaya went on to open his own nacho restaurant and his original nacho recipe was printed in St. Anne's Cookbook in 1954.

Recruiting Roundup: SU Back in the Picture for Top RB Tre Bryant (thejuice; Cheng)

Tre Bryant, a three-star running back from Christian Brothers Academy (MO) announced that he was decommiting on Twitter. Syracuse had heavily recruited Bryant to play their H-back position before he committed to Kansas State earlier in the year. Bryant said he wanted to be a featured running back, and SU can offer him that opportunity now that Robert Washington is no longer in the picture. Syracuse has continued to recruit Bryant in the meantime, though Bryant later tweeted that he will be taking an official visit to Nebraska this weekend.

West Virginia is the latest school to offer Harrisburg (Pa.) High 2018 receiverShaquon Anderson-Butts, writes 247 Sports’ Steve Wiltfong. Rutgers, Temple and Penn State, and Syracuse has shown interest.

Todderick Hunt from NJ.com writes that Phillips Academy (Chicago, Ill.) defensive tackle Amir Watts currently has Rutgers and Pitt as his top two schools. Watts is also taking an official visit to Syracuse on Jan. 10. Kansas, Pitt, and UCF are other schools in pursuit.

U of L's Fields Bounces Back with Big Game (courier-journal.com; Jones)

After a long touchdown run by Florida State’s Dalvin Cook called into question the effort of DeVonte Fields and his fellow U of L defenders, Fields has responded with some of his most effective play of the season.

Fields, the junior outside linebacker/rush end who formerly starred for TCU, had the best game of his Louisville career in last Friday’s 20-19 win at Wake Forest, recording team highs in tackles (eight) and tackles for loss (2.5).

Fields sealed the win by recovering a fumble on Wake Forest’s final offensive play, finishing a second consecutive dominant defensive performance by the Cards (4-4, 3-2 ACC). Louisville, which is ranked No. 17 nationally in total defense, will seek its third straight victory Saturday against Syracuse (3-5, 1-3).

“I feel like we (as a defense) are coming together like we pictured it at the start of camp,” Fields said.
For Fields and his defensive teammates, it’s been an impressive turnaround from the third-quarter unraveling the Cards experienced in a 41-21 loss at FSU.

The superstar Cook started a Seminole snowball with a 54-yard run in which Fields appeared not to be sprinting as Cook rounded the edge at the line of scrimmage. Once Cook got by Fields, he shed four more tacklers on a highlight-reel touchdown run.

What is Making Americans Fat? Not Soda, Candy and Junk Food, Cornell Study Says (PS; Mulder)

Soda, candy and other types of junk food are not making Americans fat, according to a study by Cornell University researchers.

The study found there is no correlation between junk food consumption and body mass index, a measure of body fat, for 95 percent of the population.

"Simply put, just because those things can lead you to get fat doesn't mean that's what is making us fat," David Just, a Cornell professor and co-author of the study, said in a prepared statement.

The study by Just and Brian Wansink, another Cornell professor, is based on national data from 2007 and 2008 describing people's food habits based on their body mass index.

Most people consumed nearly identical amounts of junk food, on average, whether they were at healthy weights or obese, according to the study published in the journal Obesity Science & Practice.

Previous studies that linked junk food consumption and obesity failed to account for the distorting effects from the roughly 5 percent of people who are either chronically underweight or morbidly obese, according to Just.

While the study acknowledges junk food is an unhealthy choice, it says junk food gets far more blame for obesity that it deserves.
