Most items are made a day before the game, outside the Dome, and imported in. #2 is that the stands also don't have the floor space to store these food items, so they have to be grab and go with extremely limited heating options. The footprint of the dome is a MAJOR problem. It's also why the upper concourse has more dome foam in your beer than the lower. Nowhere to store the kegs on the upper level = longer lines to the tap.
