Prudential Center had some local restaurants providing food when they first opened in 2007...that lasted for a few years and then disappeared because it didn't make any sense for the arena or the restaurants.  There are dozens of challenges with this model - getting restaurants to set up food trucks in the quad is feasible since they control all the cooking equipment. Asking restaurants to use whatever the Dome has is not something restaurants will generally sign up for.  You also have each individual restaurant trying to manage inventory, OR being asked to give up inventory management to the University - both of those have severe downsides to fan experience.

I'd rather there be one vendor, and the university work with them to upgrade as much as possible within the limitations of the Dome footprint.
