As for hotels, there are lots of options. You can usually find hotels in downtown Houston fairly cheap although there is not a ton of stuff to do downtown at night. A cab ride from a downtown hotel to the stadium should run you about $17-22 bucks. Some hotels may have courtesy shuttles that will be willing to drop you off and pick you up. Call them.
 
The stadium is in the Medical Center area of Houston where there are several very large hospitals. There are a lot of hotels in this area including a Hampton Inn, Marriot, Springhill Suites etc If you want to be close to the stadium this would be your best bet.
 
The other areas you might look at would be the Museum district or West Univerisity area near Rice. Both would be a short shuttle/cab ride to the stadium.
