but the way you do it rub it, sous vide it for 24 hrs at 155 degrees, chill it in ice water, light your pit barrel cooker that you should all get (or even a gas grill with wood chips in foil packets with holes if that's all you have), smoke til there's bark, glaze with bbq sauce, smoke a little more, then get fat.
