Oswego Sub Shop Cheeseburger Sub Recipe Needed

I have signed up to make OSS style cheeseburger subs for the tailgate Saturday.

Did this before shortly after they opened a sub in Liverpool. I think that one was called Empire Sub Shop.

Anyway, I had a couple of them from there and loved them and tried to replicate what I tasted at a tailgate around then. This was nine or ten years ago.

That shop closed shortly afterwards and I haven’t had one since.

Anyone able or willing to share a recipe for what goes into these? It has been so long I am not sure any longer.

I believe it was mostly loose ground beef. Probably 80-20 blend. There was some fat/flavor in it.

I believe it also had lots of melted cheese in it. If I remember correctly, it was mostly, maybe completely mozzarella.

Were there diced onions in it? If so, were they grilled or raw? I thought there were some grilled diced onions but maybe not.

I believe there was also a fair amount of mayonnaise mixed into the ground beef and cheese. That I think was a key, somewhat secret ingredient.

Any spices in it? Just salt and pepper? Was there some garlic salt in it? Onion powder? Something else?

Any feedback from OSS cheeseburger sub experts would be greatly appreciated.
