For people that have been to them before, are there any particularly delicious parts of the pig that I should call dibs on? e.g. I've heard that face/cheek meat is incredible.

My friend always eats the ears but I've never tried

I've had cheek from a cow head bbq before and it was pretty good so I'd imagine that's also true of pig.

We just had a pig roast, Cooked the pig in the ground. Put it in at midnight, woke up at 9, started drinking, pulled the pig out at noon. No clue what part of the pig I ended up eating. I do know that I woke up next to my tent, not in it.


Moral of the story, when you're headed to a pig roast, worry about bringing enough beer, eat what ever you see
 
I've cooked two pigs in my life. A couple of tips...

1. If using a pig roaster, make sure you have plenty of baking soda, the grease fires can get huge!

2. If you don't want to cook the pig with the head on make sure you have the butcher cut it off first. Nothing like cutting a pig head off with a dull knife.
 
Gotta roast the whole animal head and all. Cheeks are the best as mentioned above. When I lived in Miami we went down to Homestead and these Haitians running this farm killed the one we wanted. Little guy. We then went back to my building and coaxed the landlord whom I was tight with to open up one of the vacant apartments so we could marinate the pig in the tub overnight! We did a mojo/caribbean style brine. I think we started it around 9 am and it was ready late afternoon. Rented a spit. So ridiculous!

Thought I had a pic of the finished product, but I don't. Stuffed these guys with all sorts of veggies. We always have better luck burying the pig, rather then rotisserie style.

Do you cook Sasquatch the same way? With a special PBR basting sauce?

Excellent. Woke up next to the tent but in the pig. Very nice.

Hopefully the pig was hypoallergenic.

My phone was on the bar when you sent that. My buddy spent 4 years in Italy a while ago, lived with marchello gandini. He saw your screen name, was interested in the meaning. Says forza means like "go" and azzuri might be a name? I guessed a soccer team

The jowls (cheeks) on the face.
 
azzurri means blue...usually light blue. Not going to speculate why Forza uses that screen name.

Forza Azzurri is the Italian equivalent of "Let's Go Orange".

It is the cheer Italians use to cheer on their National Soccer team.

It literally means, " Let's go Blues".
 
azzurri means blue...usually light blue. Not going to speculate why Forza uses that screen name.

I use it because our "Let's go Orange" is, IMHO, our most distinctive cheer.

So, to honor both it and Italy, I chose it as my handle.
