How shell we celebrate? May 16 is National Coquilles St. Jacques Day!
For those who need to brush off the ol' French translation books, today we’re celebrating scallops.
Coquilles St. Jacques, or scallops St. James, is a classic French preparation of the soft, mildly sweet mollusks. It’s named for - you guessed it - St. James, who is reputedly buried in the cathedral ofSantiago de Compostela in northwest Spain.
Pilgrims visiting the cathedral would often carry scallop shells with them in the apostle's honor. It’s said that the grooves on the shell represent the different paths pilgrims take, ultimately all winding up at the same destination - the cathedral. The scallop shells also served a more practical purpose, as water and food bowls.
As for the actual dish, the scallops are poached in white wine, then placed back in a clean scallop shell over sautéed mushrooms. The dish is then topped with the reduced poaching liquid, cream, cheese and breadcrumbs and broiled until just crisp and brown.

Malachi Richardson Going in the First Round Would Put Syracuse in Elite Company (TNIAAM; Cassillo)
Malachi Richardson is staying in the NBA Draft, according to reports, though he's yet to hire an agent and still has until May 25 to make a final decision. Draft experts believe that the Syracuse Orange standout eitherhas or will receive a first round guarantee from a team, which is what he wanted in order to stay in the pool of players.
Obviously this will impact Syracuse's lineup for next year, and we'll get to that. But if Malachi going in the first round comes to fruition, there's a positive impact to be had too. Richardson would become the latest piece of a growing selling point for Orange recruits: come here and become a first-round pick.
Since the end of the 2011-12 season, Syracuse has had five players go in the first round of the NBA Draft: Dion Waiters, Fab Melo, Michael Carter-Williams, Tyler Ennis and Chris McCullough. That's tied for fourth in the country with Kansas and UCLA, and just one behind third-place North Carolina for selections in that time period (full list here). Better yet, Syracuse is one of just four schools with at least one player chosen in the first round of the last four drafts, along with Kentucky, Duke and Kansas. If Richardson's picked in the first, and other draft projections hold, SU will be one of just three schools (with Kentucky and Duke) to have a first-rounder in five straight drafts.
Better yet, Syracuse has had a first round pick in all but one year (2011) since 2009.
When we talk about this program's ability to be perceived at a higher level, this is what we're focused in on. NBA-caliber talent usually equals success for a college program. It's easy to see that year over year, or even by just looking at the names that accompany Syracuse atop the list of recent first-rounders. More often than not, NBA talent is a large part of program success. And the more names you can add to that selling point to recruits, the more likely you'll land future draft picks too.

Michigan State Making Late Run at Big Man Taurean Thompson (usatodayhs.com; Scolari)
Tom Izzo has one more scholarship available. Taurean Thompson still hasn’t picked a college.
It could be a match. Or not. Regardless, Michigan State is making a late push in pursuit of the big man who is among the best unsigned high school players in the class of 2016.
Thompson recently received a scholarship offer from the Spartans and reportedly has whittled his finalists to Michigan State, Syracuse and Seton Hall. The 6-foot-9, 220-pounder from Brewster Academy in New Hampshire has taken official visits to his other two finalists, as well as to since-pared Xavier and Connecticut. He has one official visit remaining, per NCAA rules, and it appears MSU could be his last stop.
Jason Smith, the coach at Brewster Academy, went with Thompson on his visit to Syracuse, which has long been considered the favorite to land the power forward. He said Thompson and his mother are working to arrange a trip to East Lansing, but Smith said a date has not yet been determined. The NCAA’s late signing period ends Wednesday.
“I know that his mother has been very deliberate, as well as she should be as a parent in this process,” Smith said. “I think she’s taking her time because, frankly, you don’t want to end up as one of the 700 names on the transfer list.”

J-D Grad Brittany Cohen Going 'Home' to Coach Potsdam Women's Basketball (PS; Weidner)
Brittany Cohen said her first head coaching job sort of feels like going home.
The 26-year-old graduate of Jamesville-DeWitt High School was recently named the next head coach of women's basketball at SUNY Potsdam.
Cohen never lived in the North Country village, but her grandfather, Stan Cohen, coached men's basketball at the Division III school for more than 40 years and her father, former Syracuse University guard Hal Cohen, was raised in nearby Canton.
"I'm really excited about it. My family is, too," said Cohen, who just completed a one-year internship with the NBA Dallas Mavericks, whose coach, Rick Carlisle, hails from Lisbon, another North Country village.
Cohen played in college at SUNY Cortland and has worked as an assistant at Le Moyne College, J-D High School and Nazareth College.
"This is something that I've always wanted to do," she said of being in charge of a program.
She'll have her work cut out for her, as the Bears' best season in the past five seasons was 6-19 in 2013-14 under former coach Tara Ruckh. The Bears were 1-24 last season and 0-18 in the SUNYAC.
Cohen is hoping that her Central New York connections can help her lure some Syracuse-area talent North.
"I've already been working," she said. "I'm hoping to get some local girls up here."
