Welcome to National Whipped Cream Day!

National Whipped Cream Day is celebrated on the birthday of Aaron S. "Bunny" Lapin, one of the founders of Reddi-Wip whipped cream. He created Reddi-Wip in 1948, and applied for a patent for "dispensing valves for gas pressure containers" the following year, receiving the patent in 1955. Reddi-Wip began being nationally distributed in 1954, and Lapin sold the company in 1963. Today it is owned by ConAgra foods, and is the second most eaten brand of whipped topping in the United States.

Whipped cream is made by taking heavy cream—of at least 35% fat—and aerating it until it is light and fluffy. Reddi-Wip is created by using nitrous gas. The injecting of gas such as this under high pressure using a whipping siphon is one of two ways to aerate heavy cream. The other way is to use a speed blade, whip, whisk, or mixer. While doing so, the cream becomes about double the volume of the original cream. The higher the fat content of the cream, the easier whipped cream is to make. It is also best to use ingredients and equipment that are cold.


Whipped cream first came about in the sixteenth century, and was originally called "milk snow." Until the end of the nineteenth century it was whipped with willow or rush branches, and foam on the surface was skimmed off. It then became easier to whip because of the invention of the centrifuge, which increased the fat content of the cream that went through it.

SU coach Jim Boeheim on 18-day layoff: 'It’s no fun not playing' (PS; $; Waters)

Syracuse will return to the court Wednesday after an 18-day pause due to Covid contact tracing.

The Orange will face a team that it wasn’t even scheduled to play until Sunday, a Pittsburgh team that hasn’t played Dec. 22 after having two games postponed for coronavirus-related issues.

And top things off, the game will be played at the pandemic standard time of 4:30 p.m. Of course, there will not be any fans at the Carrier Dome.

But Syracuse (6-1 overall, 1-0 ACC) will at least be playing a game, something the Orange hasn’t done since a 107-96 overtime win over Buffalo on Dec. 19. Two days after that game, Buffalo had multiple players test positive for Covid-19, which put Syracuse on pause and several SU players into contact tracing quarantine.

Opponent preview: What to know about Pittsburgh (DO; Dabbundo)

Following a 17-day layoff with three games canceled due to COVID-19, Syracuse returns to the court on Wednesday at 4:30 p.m. against Pittsburgh. Although the game was originally scheduled to be against Florida State, COVID-19 issues within the Seminoles’ program forced the schedule to adjust.

Syracuse (6-1, 1-0 Atlantic Coast) last played on Dec. 19, a 107-96 home overtime win against Buffalo that featured a game-saving, last-second block by Alan Griffin. Now, they’ll continue ACC play with familiar foe Pittsburgh (5-2, 1-1).

Here’s what you need to know about the Panthers before Wednesday’s game:

Syracuse swept the two-game season series with the Panthers in 2019-20, including a 72-49 road win at Pittsburgh in February. The Orange were led by 25 points by Elijah Hughes, and a double-double of 13 points and 10 rebounds by Bourama Sidibe. Joe Girard III made 4-of-7 from beyond the arc and the Orange jumped out to a 16-point lead at half before cruising to the 23-point victory.

Syracuse’s defense held the Panthers to 6-of-26 from 3-point range and won its seventh consecutive game against Pittsburgh.

Syracuse has a 77% chance to beat Pittsburgh, by a projected score of 75-67.

Pittsburgh’s opening night defeat to Saint Francis (PA) at home remains as one of the worst nonconference losses by any high-major team in the country this season. They have rebounded well from that 10-point home loss, though, winning at both Miami and Northwestern. Both of those teams are top 70 in KenPom, and the emergence of star Justin Champagnie appeared to be quite the boon for the struggling Panthers.

On Dec. 22, though, it was announced that Champagnie would miss six-to-eight weeks with a knee injury. He’s not available for the Panthers now, and he was out for their 10-point loss to Louisville on Dec. 22. The Panthers have not played since, so they are also dealing with a long layoff over the holiday period.

Pittsburgh will be without at least 3 scholarship players when it plays Syracuse Wednesday (PS; $; Ditota)

Pittsburgh men’s basketball coach Jeff Capel said this morning that his team will be without three, possibly four scholarship players when it faces Syracuse Wednesday in the Carrier Dome.

The game, rescheduled after Florida State could not make the Syracuse trip for an originally planned contest, will take place at 4:30 p.m. in the Carrier Dome and be televised on the ACC Network.

One of those players will be Justin Champagnie, one of the ACC’s best players. Champagnie, who was averaging 17.8 points and 12.3 rebounds per game, is out with knee trouble. Capel declined to identify which other players would be unavailable. The Panthers will have 9 or 10 scholarship players available for the SU game.

“Justin’s a big loss for us, period,” Capel said on an ACC coaches’ Zoom session. “Obviously for Syracuse, with their zone, he’s a guy that we feel like is very comfortable in the middle of the zone, which we think can be a point of attack and also along the baseline. Justin also has the ability to step out and make a three. But his biggest strength this season is rebounding, especially offensive rebounding. It’s a huge loss for us, but it’s also a tremendous opportunity for other guys to step up.”

Previewing Syracuse’s New Next Opponent – Orange Fizz – Free Syracuse Recruiting News (orangefizz.net; Shults)


Well the Orange were supposed to play Florida State on Jan. 6 after the postponement of games against Notre Dame, Wake Forest and North Carolina after a positive COVID-19 test in SU’s program. But now Florida State is dealing with a positive case of its own.

Now Syracuse will play Pittsburgh on Wednesday in the Dome. SU has not played a game since Dec. 19 when it defeated Buffalo in overtime. Pittsburgh also hasn’t played in quite some time, with its last completed game — a 64-54 loss to Louisville — played on Dec. 22. Since that loss, the Panthers have had games canceled against Duke and Notre Dame.

Currently, Pitt is 5-2, 1-1 with its only Atlantic Coast Conference win occurring over Miami. Sophomore forward Justin Champagnie averages nearly 18 points per game and over 12 rebounds. While most of Pitt’s games have come against overmatched non conference opponents, the double-double average is still incredibly impressive for the 6-foot-6 forward.

With Bourama Sidibe likely returning to the lineup on Wednesday, Champagnie will likely struggle to overpower Syracuse in the paint like he has been able to so far.

Pitt’s second best scorer is also a 6-foot-6 forward, in junior Au’Diese Toney. Over seven games, Toney is shooting nearly 41% from three on 22 attempts. He’s also pouring in about 16 points per game, and five rebounds.

Orange Watch: After COVID pause, Syracuse basketball returns - The Juice Online (the juice; Bierman)

Item: When Syracuse and Pittsburgh face off in another unusual weekday matinee Wednesday in the Dome (4:30 p.m. ET / ACC Network), due to pandemic-related issues it will have been 18 days since we last saw the basketball Orangemen in action.

Doesn’t it seem like the Dec. 19 Syracuse come-from-behind win against Buffalo was played in a previous season?

After someone with the Buffalo program tested positive for COVID-19 following the game and forced the Orange to pause full basketball operations due to state-mandated contact tracing guidelines, there’s only been a defined number of individual activities available to the SU players and coaching staff.

The ACC Monday held its first in-season coaches video conference call, in which there was one obvious theme for Jim Boeheim and all 14 of his colleagues; how a particular program was getting through its season of interruptions during the midst of an onslaught of positive COVID-19 cases around the country.

“Based on contact tracing you can work out individually only on the court, for whatever length of time you want to, and in the weight room,” Boeheim clarified during the call. “All of our guys who were negative but in tracing were able to work out individually with a coach. And that’s helpful.”

One could easily hear the natural frustration of the head coaches, usually traversing in a world where they set the rules and expect them to be explicitly followed. Everyone has had to make huge adjustments based on state and local disease guidelines that differ by location, and it’s no different for Boeheim who’s been around longer than anyone.

“We’ve missed 25 to 30 practices, which is an incredible number, Boeheim lamented Monday. “I’m sure it’s right up there probably with the most missed practices in the country. It’s just what it is, you have to do the best that you can.”

Syracuse basketball ACC’s No. 2 in first NET ratings, ahead of blue bloods (itlh; Adler)

Syracuse basketball has a solid initial NCAA NET ranking.

The NCAA has posted its inaugural NET rankings on its Web site, and Syracuse basketball is sitting in an excellent position so far.

The Orange (6-1), whose only loss is on the road to highly rated Rutgers minus two of its starters, checks in at No. 25 in the first NET ratings.

The ‘Cuse, as of Monday morning, is No. 2 within the Atlantic Coast Conference, trailing only Clemson, which is No. 15 overall in the NET and has put forth a tremendous 2020-21 campaign to date.

The NET system, by the way, replaced the RPI a few years back as the main evaluation tool for the NCAA in determining invites to the annual Big Dance.

Not only is Syracuse basketball No. 2 in the ACC, but the Orange is also ahead of a bunch of blue-blood programs at this juncture as far as the NET ratings go.

The ‘Cuse NET rankings are better than Kansas, North Carolina, Duke and Kentucky, as well as others such as Ohio State, West Virginia, Connecticut, Indiana and UCLA.

While it’s still early on in the present season, the Orange arranged higher than these other teams brings me some encouragement about the prospects for the ‘Cuse in 2020-21.

Syracuse basketball is No. 25 in the inaugural NET ratings.

I have to admit that I’m a bit surprised – pleasantly so – about the Orange’s first NET ranking. The ‘Cuse has a “good” defeat, but its wins aren’t all that stellar, coming at Boston College and then home versus Bryant, Niagara, Rider, Northeastern and Buffalo.

Syracuse Basketball: Jai Smith has about 40 offers, but not from Orange (itlh; Adler)

Syracuse basketball has yet to offer local product Jai Smith.

Perhaps it’s just not in the cards that Syracuse basketball is going to offer Central New York native and 2022 three-star power forward Jai Smith, whose recruitment has exploded on a national level.

We’ve written articles in the past that speak to the ‘Cuse program reportedly showing interest in the 6-foot-9 Smith, according to various recruiting analysts as well as interviews given by Smith himself.

However, to date, no scholarship offer has arrived from the Orange to Smith, who previously played for Bishop Ludden Junior-Senior High School in Syracuse and is now a junior at Bull City Prep Academy in Durham, N.C.

Per a review of various recruiting Web sites, Smith’s offer list has grown to about 40, which is pretty astounding. Some of his most recent scholarship offers have come from Texas and Kansas out of the Big 12 Conference, Big Ten Conference member Illinois, and a trio of Pac-12 Conference schools in Oregon, UCLA and Southern California.

Other offers are from high-major squads such as Maryland, Georgia, Missouri, LSU, N.C. State, St. John’s, Marquette, Arizona, Seton Hall, Oklahoma State, West Virginia, Texas A&M, Alabama, Memphis, Houston, Wake Forest and Georgia Tech.

We’d love to see Syracuse basketball offer three-star power forward Jai Smith.

Georgia Tech’s Alvarado, UNC’s Sharpe Pick Up ACC Men’s Basketball Weekly Honors (theacc.com)

Georgia Tech senior guard Jose Alvarado was named the ACC Player of the Week on Monday, while North Carolina forward/center Day’Ron Sharpe was selected as the ACC Freshman of the Week.

ACC men’s basketball weekly honors are determined by a vote of a 15-member media panel and announced on Mondays throughout the regular season.

A native of Brooklyn, New York, Alvarado averaged 22.5 ppg, 5.5 rpg and 4.5 apg as Georgia Tech picked up a pair of ACC victories to extend its win streak to four games. Alvarado was 17-of-24 from the field, including 3-of-7 from 3-point range, as the Yellow Jackets defeated North Carolina (72-67) and Wake Forest (70-54). He scored 12 of his game-high 20 points in the second half of Tech’s triumph over UNC, helping spark the Yellow Jackets’ rally from an eight-point deficit over the final seven minutes. He hit 8-of-10 shots from the floor, pulled down seven rebounds and assisted on seven other Tech baskets in the game. Alvarado scored a game-high 25 points against Wake Forest, hitting 9-of-14 shots from the floor, including a pair of 3-point baskets, and was a perfect 5-of-5 from the foul line. He added a pair of assists and a steal and did not turn the ball over in 35:49 of game action.

Sharpe averaged 16.0 ppg and 8.0 rpg in games against Georgia Tech and Notre Dame last week. He was 12-of-25 from the field and 8-of-13 at the free-throw line. The native of Greenville, North Carolina, recorded seven points, seven rebounds and two steals at Georgia Tech in his first college start and followed it up with 25 points and 10 rebounds (seven offensive) in a one-point win Saturday over Notre Dame. It was his second college double-double, including his first in an ACC game. Sharpe scored 19 of his game-high 25 points in the second half, recording more than half of UNC’s second-half point total (37). His 25 points were the most by a UNC freshman post player since Tyler Hansbrough scored 27 at Duke on March 4, 2006. He also set season highs for the Tar Heels in points (25), field goals (9) and offensive rebounds (7).

See newly built apartments in 1869 building on Syracuse’s Northside (photos) (PS; $; Moriarty)


The trend toward transforming vacant, historic buildings into upscale apartments is growing on the city’s North Side.

James Stevens bought the three-story building at 701-703 N. Salina St. in 2015 for $93,000 and is completing the construction of three apartments on its upper two floors.

He plans to live in the two-bedroom apartment on the third floor, which includes a mezzanine level and an outdoor terrace with views of the North Side, the lakefront and downtown. The two one-bedroom apartments on the second floor are already leased. The tenants are expected to move later this month.

The apartments feature granite countertops and stainless steel appliances.

The building also contains 1,700 square feet of commercial space on the first floor, where the building’s original storefront has been restored. No tenant has been signed up for the commercial space yet.

Located on the northwest corner of North Salina and East Division streets, the building was last occupied by the Union Smoke Shop before becoming vacant about 10 years before Stevens bought it.
