Because outside of Fab most 7'0+ are stiffs and wouldn't be good fits. Don't get caught up in heights, wingspan is the key measurement when looking at bigs and wings. Rak is 6'9, but has a 7'3 wingspan which is the same as Fab. Anthony Davis was 6'10 but has a wingspan of 7'6 lol. Which is why Rob Murphy tried to lock him down before UK and others got in the picture.
