I'm not a gamer so I'm not really certain how many different games they have that would come into play here. Seems unlikely that you would need to include any members of the University of Vermont since I highly doubt they have their images used in the games. Truly, I would imagine this really only applies to a very select number of teams - 30 or so would be my initial guess.
EA and 2K used the likenesses of pretty much all starters on every team that was included. The more well known teams would obviously have much fewer roster inaccuracies, accurate backup players, and more finely tuned player appearances, but most starters on small teams were in the game.
For example, if Vermont had a 6'0" Senior guard who was a three point specialist and white, there would be a player model of a 6'0" white guy who generally resembled the real deal. His year and position would match and he would likely have a high 3pt rating.
EA kind of shot themselves in the foot when a spokesperson admitted that they would edit all of the rosters with the real names of players and just replace the names with the accurate player numbers before shipping.
Personally, I want the players to lose this lawsuit solely for the selfish reason that I miss having a college hoops game to play. Conventional wisdom says game producers are waiting for this case to be resolved before relaunching a college bball game. A negative court decision would be the death of that, as college basketball games were only slightly profitable before getting the ax.
