Kelly Slater? Tony Hawk? The team sport guy that comes to mind is Barry Sanders, though there are probably linemen or kickers that dominated from start to finish.

The team sport guy that should come to your mind is Jim Brown and not just because this is a Syracuse fan board. Beast mode for his entire career from start to finish. As for individual sports the swimmer Phelps and the speed skater Eric Heiden come to mind.
