Welcome to National Baked Scallops Day!

March 12th is a food holiday celebrating a popular delicacy, the scallop.

Scallops are a cosmopolitan family and can be found in all of the world’s oceans. They are one of the most popular shellfish in the world and highly prized as a food source.

There are two fleshy parts of the scallop that are usually sold at market for human consumption. The adductor muscle is the white medallion of meat which is rich and sweet. This is the piece that is most familiar as the “scallop” we see on a menu.

There is also the coral or the roe which can range in color from pale coral to bright orange. This crescent-shaped piece is usually discarded before the scallop is sold at market because it may contain toxins. However, sometimes it is sold attached to the adductor muscle. It is bitter and some say it cuts the richness of the rest of the scallop.

These meaty mollusks are very low in fat and are delicious prepared in a variety of ways. Baking them omits much of the butter and fat that otherwise go into cooking this lean, white seafood.

Baked scallops are often found served as a delicious entree, however, they are also known and loved as an appetizer.

Fond Recollections Of a Friend and Colleague Dying Young (lite987.com; Coombs)

When one of your friends passes away at a young age, you suddenly start seeing the world in a new light. Former Syracuse University tight end and football broadcaster Chris Gedney was found dead late last week at the age of 47. I got the news while visiting a college friend who was recovering from a recent heart attack.

My connection to Gedney came through pre-game shows on the Syracuse University Football radio network (airing on Townsquare Media's recently-acquired rock station, WOUR), where we previewed the Orange's games for years.

While driving home from Boston, processing my friend's heart attack and Gedney's death, I passed a car on the New York State Thruway with a bumper sticker reading THE BEST THINGS IN LIFE AREN'T THINGS. It's a sentiment I've often had, but this time the message really hit home.

A good life is full of tactile sensations, memorable sights and smells, shared stories and experiences distilled into poignant moments.

...McDonough signed a multiyear contract extension. The network said McDonough will do a high-profile college football game weekly throughout the season and call a College Football Playoff semifinal. McDonough said in a statement, "Being the 'Voice of Monday Night Football' was one of the great honors of my life," but he said he missed college football.Maybe he's going to remain on ESPN, but then again, the ACC Network HQ will be just around the corner in Bristol, so...

After 4 years, how does the ACC stand with respect to the CFP?

Only one conference has more total playoff bids than the ACC (the SEC, by one). The ACC stands alone in second place with 4 total bids.

Despite claims that other leagues are deeper, the fact is that NO conference has sent more different teams to the playoffs than the ACC (let THAT sink in!)

Counting championship games, here's the breakdown of total appearances:

Again we see that the ACC stands alone in 2nd place in terms of wins and total game appearances. However, to catch the SEC at this point, the ACC would need to place two teams into the playoffs - and then have them both advance to the Finals.

Chef Challenge Syracuse: Watch pros turn mystery box into gourmet meal (PS)

Restaurant customers often only get half the experience.

Orders are taken and the food is served. But few get to sneak back into the kitchen to see the chefs and cooks at work.

Chef Challenge Syracuse aims to change that, at least for a handful of nights each month. The events let diners into the kitchen to watch local chefs turn a delivery of locally grown or sourced ingredients into a multi-course dinner.

The events are organized by Ashley Murray And Josh Rhoades, who also run Pragmatic and Fresh, a fledging marketing firm aimed at promoting local growers, restaurants and chefs.
