Welcome to Pulled Pork Day!

Pulled Pork is a dish that has its origins in the southern parts of the United States, based on the idea of shredding the meat after it has been barbecued. Although it can certainly be made in a slow cooker, the most traditional way to do so is to slow-smoke it over wood.

The process of cooking the meat through smoking seems to have spread through Spanish settlers who observed what native peoples (likely in the Caribbean or perhaps the United States) were doing. They learned that smoking meat through the use of an indirect fire provided a way of keeping the bugs away while preserving it. And this seems to have been the predecessor to what everyone now knows as a barbecue.

Through this method, the desired meat usually was pork, due to its affordability as well as availability. It is almost always made from the pork shoulder (sometimes called pork butt, Boston butt or picnic shoulder), which is a fairly inexpensive cut. The meat should be somewhat fatty, which adds flavor to the dish, and it cooks up extremely tender. Ideally, the meat will be slow-smoked for a very long time, so that the connective tissue becomes tender and falls apart even before it is actually “pulled”.

Film Review: In overtime loss, SU utilizes QB's abilities with read-options (DO; Vasudevan)


With Garrett Shrader as Syracuse’s new starting quarterback, the Orange’s offense became even more dynamic, utilizing the quarterback’s dual-threat abilities with read-options on almost every play.

Read-options in head coach Dino Babers’ offense leave the quarterback with several choices: pitch the ball to a motioning receiver, hand it off to a running back or keep it themselves. The decision is dependent on how one defensive player — left unblocked — reacts after the snap.

For most of the game Shrader made appropriate decisions, finishing with 178 rushing yards on 29 attempts. When he didn’t keep it, Shrader gave the ball to Sean Tucker, the Atlantic Coast Conference’s Running Back of the Week. Tucker recorded 153 yards on 26 attempts, recording his fourth straight 100-yard rushing game.

These are the key plays when Syracuse used the read-option against Wake Forest:

Shuffle, shuffle, run


After hitting on this play — when Shrader handed the ball off to Tucker for a 15-yard gain — the Orange return to their bread and butter in Wake Forest territory. This read involves Tucker and Shrader getting rid of the motioning receiver that is present on most plays.

While Shrader struggled with his decision-making on this play in previous games, he made the right choice on almost every read against the Demon Deacons.

After the snap, defensive tackle Rondell Bothroyd — who was left unblocked — comes charging at Tucker, ready for a tackle for loss. But Shrader doesn’t hand off the ball to Tucker, instead shuffling with him for a few steps while he makes his decision.

As Bothroyd turns his body to Tucker, Shrader pulls the ball out from his stomach, running toward the left side of the field. With a good block from left tackle Matthew Bergeron, Shrader gets a free lane down the left hash, embracing a hit as he falls down deep into the red zone.

“That mesh-point is very, very delicate,” Babers said about the point where Shrader hands the ball off to Tucker. “They really have to have a fantastic feel for each other with their body language.”

Wide receivers seem to grow on trees in Winston-Salem. Jacquarii Roberson garnered preseason All-ACC honors and showed why with nine catches for 135 yards vs. Syracuse. Taylor Morin has had some nice moments; Donavon Greene would have been a returning starter had he not sustained a season-ending injury in the offseason.
Then there’s A.T. Perry, who only caught three balls in Wake Forest’s overtime win in the Dome. The three catches all went for touchdowns (somebody call Cris Carter), went for 137 yards and included the catch of the weekend to send the Deacons to 6-0.

Speaking of comebacks, Virginia trailed Louisville 30-13 late in the second half on Saturday. However, the ‘Hoos roared back behind Armstrong — winning 34-33 on the road.
Armstrong throw for 487 yards on 40-of-60 passing; he finished his performance with a 1-yard touchdown toss to tight end Grant Misch with 22 seconds left, which proved to be the game-winner


Josh Downs, North Carolina, WR
North Carolina suffered a disappointing home loss to FSU on Saturday, but wide receiver Josh Downs was superb, once again. Downs hauled in a career-high nine receptions for 121 yards and another touchdown. The sophomore receiver has seven touchdown catches on the season, including at least one in every game. Jordan Addison (nine touchdowns) is the only ACC receiver with more touchdown grabs this season, so far.

Downs ranks No. 3 in the FBS in total receiving yards, too: 741. That number is tops in the ACC by a wide margin. Virginia’s Dontayvion Wicks is second in the league with 551 receiving yards, nearly 200 fewer than Downs.

Now that we are in the conference game phase of the season, let's take a look at how to improve the schedule. Hopefully this could be parlayed into a TV pay raise, but even if it doesn't affect that, there's one change which would at least bring in more ticket revenue...

See inside a nearly 200-year-old Baldwinsville mill turned into waterfront living (PS; $; Moriarty)

A Baldwinsville mill that operated on the Erie Canal for 175 years and then as a boutique hotel and banquet facility for another 16 years is set to reopen as waterfront living for seniors.

Red Mill Manor on Paper Mill Island boasts 32 mostly efficiency apartments within an easy walk of the village center and featuring views of the Erie Canal and the Seneca River.

All-inclusive fixed rents will range from $2,900 to $4,000, depending on the size of the unit. What does all-inclusive mean? Just about everything, including:

  • Three meals a day served in a community dining room with expansive views of the Seneca River
  • Cable TV, phone service, high-speed Wi-Fi and all utilities
  • Laundry room
  • Fitness classes and other scheduled activities
  • Twice-a-month linen and cleaning service
  • Use of an on-site fitness center, library, lounge and pub
  • A Stickley-furnished living room with table games, puzzles and large-screen TV

The mill opened at 5 Syracuse St. in 1828, just three years after the Erie Canal opened, and operated until 2003, making it one of the longest running mills on the canal.

Jay Bernhardt, former owner of JGB Enterprises and a real estate developer, bought the mill after it closed and reopened it as the Red Mill Inn, a boutique hotel and banquet facility in 2006. Bernhardt closed it in 2019 and put it up for sale.

Paul Cappuccilli and his nephew and business partner Kurt Stroman bought the building in February 2020 for $700,000, according to Onondaga County property records.

Their family has built thousands of single- and multi-family homes around Central New York since Peter L. Cappuccilli Sr., Paul’s father, started a development and construction business, now named Camex Management Group, in 1953.

The family’s many projects include Village Green, a 500-acre, 2,500-unit residential, commercial and recreational development in Van Buren; Watertree of DeWitt, a 320-unit condominium development in DeWitt; and Harbor House Condominiums, a conversion of the former Oswego High School into 50 condominiums.
