Kobe is Wagyu. I believe, and could be wrong, but it gets its name because Kobe is an island or geo area in Japan. And American Wagyu is not Wagyu. (All marketing lies, especially in the early 2000's) . In the late 1980s there were 2 Japanese Wagyu cattle in the US. Two. You didn't eat one. Less than 200 full wagyu cattle have EVER been exported to the US. They are bred with American Angus, and they can call it "Wagyu" if there is 45% Wagyu. When I go to sushisamba in Vegas the Japanese A-5 Wagyu there is $38 an ounce. An incredible treat though. But not as much of a treat as the last few weeks of being a Cuse football fan.Thanks. At $50/lb am sticking with wings.
