I started watching Arrested Development yesterday on Netflix, and understand it has been such a success, they've agreed to produce another season.

I believe Southland was also cut by one network, and produced successfully on another.

Any others?

Flashpoint (CBS(?) to Ion)
Mythbusters (Discover to Science Channel)
 
Buffy the Vampire Slayer. Started on WB, finished on UPN I believe.

Cougar Town as well, dropped by ABC, grabbed by TBS.

Mystery Science Theater 3000, started on Comedy Central, moved to Sci-Fi.

Well it actually started on a small channel in Minnesota, but once it got big I mean.
 
this goes the other way around . . . Project Runway began on Bravo, but Heidi Klum didn't sign an extension and instead took her program into "free agency," whereupon she received a much more lucrative offer from Lifetime.
