Question: The yellow/gold bbq sauce referred to as 'Carolina sauce' or 'Carolina BBQ'; is it more South Carolina? From the maps I've seen on Google it appears that it's a South Carolina thing but it's hard to find definitive information. Also, where is the best place to get this type of BBQ?
 
I personally love NC BBQ, vinegar and hot pepper, yum. Y'all got alot to learn about chicken wings though.

Do you mean the vinegar based sauce or the mustard based sauce?

I grew up in TN and prefer the Memphis style BBQ, as well as Texas BBQing of beef that is essentially Memphis style for cows. And that is tomato based sauce, which is the norm in the western third of NC.

In NC, the vinegar based sauce is all powerful in the eastern half off the state. It is prominent in all parts of SC except the northwestern corner, where tomato bases sauce is the norm.

There is more mustard based sauce in SC than NC, but it is also easily found in at least the eastern half of NC. You also find mustard based sauce in eastern and southern GA.
 
Is there one of these things for Upstate, or better yet, Central NY?

Yeah the mustard based sauce. My favorite divebar in Nashville calls the gold wings 'Carolina wings' and they're some of my favorite wings in town. It's basically the same as this -

Any good spot to get some of this style BBQ on either the Wake Forest or Clemson roadtrips?

If you were on Market Street most likely. The place is dimly lit and has all booth/cafeteria style seating... their meatballs are on point as well.

Get some meatballs in your calzone and then you're doing it right!

You can add Arkansas to the beef tomato based sauce. Good eating.
