I also think if SU started something, it might be enough to get some other established restaurants to make a showing like they do at Taste of Syracuse. Come to think of it, that might be a nice tie-in for tourism.

Add in some local breweries and wineries. This stuff isn't rocket science. College football is easier to do these types of things with because there aren't that many home games.

I went to one in Boston at the SoWa market that had 20+ food trucks, a couple that had been featured on the food network. You won't regret checking it out if you have one happening in SLC.

Yeah there are a couple of solid ones in SLC, it's a fun scene.
