evenat the fair the issue is the speed they have to turn food over requires tons of people. much easier at the store
and when they cater for 100+ they send like 2-3 people out. they dont have to take orders

They wanted to place a large smoker near the Dome and have SU staff and secure it. Also had very exacting specifications on how the food was to be prepared including a detailed pork pulling guide.they made it clear they dont for the fair though. you would think if they wanted to make it simple just make all the pulled pork like the do for catering and bring it in and dont set up anything. Just sell a few hundred sandwiches and be done with it. They No serving at all would they need to do. Just provide the product, label it and add some extra markup.

Aramark would license the Dinosaur BBQ brand from them. This is a requirement from stadium vendors. They would then get a recipe from Dinosaur, and have to get the parts/labor to execute on gameday. That part is on Aramark, not Dinosaur. Dinosaur would not be providing staff to the Dome for gamedays.
That being said, if Aramark cannot produce the quality of food at the Dome, which is an enormous if, Dinosaur's brand could suffer, and they wouldn't make a big enough cut on the deal for it to be worth them taking that risk.
Generally this is a big part of why this falls apart all over sports, and why you don't see this happen too often. Even food trucks generally fall into a concessionaire's contract, but SU having the quad far enough away probably saves them there.

They used to have Dino pulled pork sandies at one of the stands before the renovation. This can be done they just choose not to.
